Sweet Potatos with Tomato/Black Bean Salsa
- 2 sweet potatoes
- 1 can of crushed tomatoes (or fresh)
- 1 can of black beans
- 1 Tb of light sour cream (or plain 0% greek yogurt)
Preheat oven to 375. Poke your potatoes generously and place in pan with about a half inch of water. Cover with foil and bake for one hour. If your potatoes are smaller or larger, you may need to adjust the time.
While those are baking, simmer tomatoes, black beans, and spices until your potatoes are done.
Once potatoes are soft, slice them down the middle and top with your fillings. I served these with a spinach salad and broiled asparagus.
