Sweet Potatos with Tomato/Black Bean Salsa

I got the idea from thisyahoo article and realized I had all of fixings in the house.Mine uses less ingredients because that’s just how I roll. Why make it complicated?


  • 2 sweet potatoes
  • 1 can of crushed tomatoes (or fresh)
  • 1 can of black beans
  • 1 Tb of light sour cream (or plain 0% greek yogurt)
  • Cumin
  • Salt
  • Pepper

Preheat oven to 375. Poke your potatoes generously and place in pan with about a half inch of water. Cover with foil and bake for one hour. If your potatoes are smaller or larger, you may need to adjust the time.

While those are baking, simmer tomatoes, black beans, and spices until your potatoes are done.

Once potatoes are soft, slice them down the middle and top with your fillings. I served these with a spinach salad and broiled asparagus.
